DAY 72

The Caramels
in the pot
boiling...
in the molds
normal caramels
chocolate caramels

just adding the extra bitter chocoalate "bottom"

unlike at the table, here we're allowed to play with our food!


cleaning off the chocolate (yes that is a blow torch!)

Mont Blanc
filling it up
scraping the excess off
air bubbles not allowed!
drainning the mold
letting the extra drip out
after spraying with the chocolate
adding the glucouse
putting in the ganache
the cherries
adding the last layer of chocolate
the yummy finish!

spreading it out
cutting into squares
